Black bean and quinoa meatloaf (not vegan) over olive oil whipped potatoes


This was my first pass at meatloaf. I was never actually that much of a fan but I’ve been trying to find new things to make -we can only eat so much chicken!

I used grass fed organic ground sirloin and mixed in quinoa, black beans, stewed tomatoes, and egg. Seasoned to taste. Topping was organic low sugar ketchup and Dijon mustard. Baked at 185 for about an hour. That’s it.

Next, what goes well with meatloaf? Mashed potatoes! But I’m also not doing dairy these days so that means no milk or butter. So I whipped up the potatoes with olive oil, salt, pepper, and a little chili powder. Delish!
