Chicken curry


Passport in hand, I’ve finally figured out chicken curry. Organic* chicken and potatoes are simmered in a gorgeous curry of tomato, pepper, onion, garlic, and spices. After sautéing, I blend the curry ingredients in my Vitamix for a smooth, flavorful sauce. It seems to make the difference for me. In the past, my curry was okay but didn’t taste like our favorite restaurant’s. Now I feel like I’ve nailed it which is so awesome because it saves us money on eating out and I don’t have to worry about hidden ingredients.

Served over organic basmati, with pickled onions and cilantro chutney.

*I may just stop saying “organic” in these posts. Every ingredient is almost always organic.
