Beef & lentil soup
Told you I have a thing for soup. Plus it is freezing tonight. A warm bowl or hearty soup is just what we need!
This one starts off with my usual base of carrots, onions, garlic, celery, and bell pepper.
And then some lentils, grass-fed organic sirloin, and potatoes go in. And I use water, not packaged broth. It’s just not necessary.
I served with rice and some lime on the side. And made a quick cucumber, tomato, avocado salad. Dressed with a little EVOO, fresh lemon juice, sea salt and pepper.
