Mint Chocolate Swirl Ice Cream (vegan, gf, unrefined)

To make the ice cream, I blended up frozen banana, mango, spinach & a dash of coconut milk with a hint of mint extract (would have def used fresh mint if I had it). Next I melted some dark chocolate (99% cacao, 1% vanilla bean) and stirred in local raw honey. I drizzled that decadent chocolate sauce on top. I actually wanted to swirl it through the ice cream but it wasn’t working out. Will need to work on this. But still yum as is!
