Chicken cutlet with mango pepper chutney and citrus salad

Raw quinoa seeds ground into flour (thank you, Vitamix, for making that so easy) coat these chicken cutlets for a crispy, crunchy gluten-free alternative. Totally could have gone all chicken parm on this but since I almost never eat dairy, I made a mango pepper chutney instead and paired with a bright citrus salad. Delish!
