Albacore Soup (gf, paleo)
This soup is inspired by encebollado de pescado, a classic Ecuadorean soup. I had to tweak it a bit for my detox but it was soothing and delicious.
This soup has wild caught albacore tuna, onions, carrots, garlic, scallion, and lots of dark leafy chard. (I would normally be putting yucca in this but sadly that’s a detox no-no.) I season with tumeric, cumin, salt and pepper. Serve with a wedge of fresh lime.
