Tostones (paleo, aip, vegan, gluten-free)

I posted a chifles (plantain chips) recipe the other day and wanted to post tostones as well. Tostones are also made from green plantains (platanos verdes) but result in a softer texture.

Refer to the chifles recipe for how to cut a plantain and details on oil quantity.

-For tostones, it’s a thicker cut. (See pic)
-Next, you give it a light fry on each side. You’re looking for: 1) a golden brown color, 2) when you push lightly on them with a spatula, they start to give in a bit.
-Using a tostonera or a plate, flatten your semi-cooked plantains.
-Then place them back into the pan to finish them off.
-They will be crisp on the outside and soft on the inside.
-Sprinkle with salt while still hot

Serve with chimichurri, guacamole, or garlic oil.
