Blueberry shortcake in a glass (paleo, aip, vegan accommodating, refined sugar-free)

Lightly sweetened vanilla coconut cream and plump organic blueberries are layered between freshly baked sweet plantain muffins (recipe forthcoming).

This decadent blueberry shortcake is a grain-free, dairy-free treat, that is also easily vegan with an egg substitute in the muffins.

I’ll post the muffin recipe soon. They were also lovely on their own. Lightly sweet, moist muffins. Sort of like corn bread with that same kind of sweet/savory flexibility.
