Mesclun with berries, coconut & chicken (AIP, Paleo)

AIP detox day 3 here. So what’s for dinner?

Mesclun, berries, coconut chips, avocado, cucumbers and chicken are tossed in olive oil, lemon, and salt. Simple, nutritious, delicious.

I’ve also been reading Terry Wahls book and she really answered my questions about vitamins and minerals from food, not supplements. While I’m not quite at the 9 daily cups of greens, colors, and sulphurs she recommends, I’m making a conscious effort to eat more of them at every meal.
